Guar gum is a polysaccharide of plant origin formed by galactose and mannose, which defines guar gum as a galactomannan. It is a crushed white or light gray odorless powder. It is a polymeric compound of more than 10,000 galactose residues. Guar gum is well soluble in cold and hot water and organic solvents, and is compatible with most other plant hydrocolloids such as agar, carob gum, pectin, methylcellulose, etc. Guar gum is obtained by making it in cold and hot water and organic solvents.
Guar gum is obtained by extraction from the seeds of the plant Cyamopsis tetraganoloba , a grain legume known as guar (pea tree, Indian acacia)
